Featured Recipe: McCormick Culinary® Tomato Clams

This clam appetizer is the perfect start to any spring or summer menu. Savory miso and tomato meets celery salt and smoked paprika to create the perfect blend in Chef Shota Nakajima’s tomato clam recipe. Clams are the perfect host for the flavors of this dish featuring OLD BAY® Seasoning and Mediterranean Style oregano. Once the clams open up, their sweet juices run free and mingle with the tomatoes and spices for a balanced but bold flavor.
McCormick Culinary® Tomato Clams
Yield: 4 servings
Prep time: 5 minutes
Cook time: 25 minutes
Ingredients
Tomato Paste
2 cups Dashi
40 grams Miso
10 tbsp. Tomato paste
4 tbsp. OLD BAY® Seasoning
16 pieces Squash
2 tsp. McCormick Culinary® Oregano, Ground Mediterranean Style
Clams
20 Clams, in shell, scrubbed
4 cups Sake
4 tsp. Heavy cream
14 pieces Basil, fried
Cooking Instructions
Tomato Paste
- Combine the tomato paste, miso and OLD BAY seasoning.
- Slowly add dashi to mixture.
- Slowly simmer down with oregano and squash until half way.
Clams
- Place clams in pot with sake and slowly simmer until they open up.
- Add clam juice into the sauce.
Serving
- Place a spoon full of the tomato paste in the bottom of a bowl and top with the cooked clams.
- Finish by drizzling the tomato paste of the clams and serve.
